Sushi knife

A few days ago, when I went to sushi restaurant, I wonder why the sushi chef uses two knives and asked him that. He answered that the long one is used to slice fish thinly and the short one is used to do other works. He also said because he was very particular about his knife, his knives were made-to-order and other chefs at the restaurant had each made-to-order knives. When you have sushi at the counter, please focus on each chef’s knives!!
